I, too, am excited about everything that's happening with LEDs. As far as undercabinet task lighting goes, I like to mount the fixtures toward the front of the cabinets, pointed toward the backsplash and the countertop. If the fixtures are mounted at the back of the cabinetry, they could look like glaring bands of illumination when you're sitting at the breakfast table or in an adjoining room. I like the LED tape lighting to be pointed at a 45-degree angle. Manufacturers like Environmental Lights  and Aion LED  offer aluminum extrusions that position the lights at a 45-degree angle and can be ordered with an accessory lens to help spread the illumination more evenly.
